Dads Matzo Brei
Ingredients:
2 sheets matzo
2-3 tablespoons unsalted butter
4 large eggs, beaten with one tablespoon of water
large pinch os fine sea salt
1 tablespoon sugar
Steps:
Under cool water, rinse matzo sheets until they are wet. Set aside and let it sit to soften while you prep the pan.
Place a large, preferably non-stick pan over medium-high heat and add butter. Once it melts, break matzo sheets into small pieces and drop in pan. Cook matzo in butter until it browns all over, around 2 minutes.
Add eggs to the pan and scramble the mixture until it is just set, but still fluffy. Sprinkle with sugar and mix well.
