Peanut Butter S’mores Bars
Sometimes I have the urge to bake, and sometimes I struggle to find something to make. These peanut butter s’mores bars from The Broma Bakery caught my eye. These are the perfect summer treat for anyone, as long as you aren’t allergic to peanuts :)
Ingredients:
1/4 cup unsalted butter, room temperature
1/2 cup natural peanut butter
3/4 cup brown sugar
1 egg, room temperature
1 cup all purpose flour
3/4 cup graham crackers
1/2 teaspoon baking soda
3/4 teaspoon salt
2/3 cup dark chocolate bar, chopped
2/3 cup mini marshmallows
Steps:
Preheat the oven to 350 degrees F. Line a 9x9 or 8x8 square pan with parchment paper. Set aside.
In a stand mixer with the paddle attachment, beat together the butter and peanut butter until just combined.
Add the brown sugar and mix. Add the egg and vanilla extract. Mix until fully combined.
Take the graham crackers and place in a large plastic, sealable bag. Use a rolling pin or anything heavy to crush the graham crackers into crumbs. Set aside.
Scrape down the bowl and add the flour, graham cracker crumbs, baking soda, and salt. Mix until fully combined.
Add the marshmallows and chocolate pieces and fold twice to distribute throughout the batter. Place the batter to the prepared baking pan and pat into an even layer.
Bake for 20 to 30 minutes or until set on the edges and a knife inserted into the middle comes out mostly clean. Don’t wait until the knife comes out completely clean. Allow the bars to cool before slicing into 16 pieces.
